Tapas - Spiced Lamb Quesadilla, Wild Garlic
To make the dough:
- 100 g plain flour
- a dash of oil
- enough water to make a simple dough
- 150 g minced mutton or lamb
- 100 g grated very mature cheddar cheese
- 10 leaves of wild garlic
- 1 pinch smoked paprika
- 1 tsp harissa paste
- 1 tsp cumin seed
- 1 tsp fennel seed
- 1 tsp coriander seed
- 1 tsp carraway seed (toasted and lightly bashed)
Cocktail: A Good Friday Alexander?
- 2 shot gin
- 1 shot Créme de Cacao
- ¾ shot double cream
- dark chocolate (very cold, to grate over)
