In this class you’ll learn how to create a Tapa of Spiced Lamb Quesadilla with Wild Garlic. Then you’ll learn how to make A Good Friday Alexander? Crème de Cacao, gin and cream Cocktail.

Equipment

  • frying pan
  • kitchen towel
  • cocktail mixer and stirrer
  • martini glass for the cocktail

Ingredients
  

Tapas - Spiced Lamb Quesadilla, Wild Garlic

    To make the dough:

    • 100 g plain flour
    • salt
    • a dash of oil
    • enough water to make a simple dough

    Spice Lamb:

    • 150 g minced mutton or lamb
    • 100 g grated very mature cheddar cheese
    • 10 leaves of wild garlic
    • 1 pinch smoked paprika
    • 1 tsp harissa paste
    • 1 tsp cumin seed
    • 1 tsp fennel seed
    • 1 tsp coriander seed
    • 1 tsp carraway seed (toasted and lightly bashed)

    Cocktail: A Good Friday Alexander?

    • 2 shot gin
    • 1 shot Créme de Cacao
    • ¾ shot double cream
    • dark chocolate (very cold, to grate over)
