Brilliant fun!

I did Ann’s Tarte a la Tomate, Salade aux noix et au parmesan today and it was SUCH fun! Ann is a very engaging and entertaining teacher (I even managed to dust off a bit of my O Level French) and I’m sure if we didn’t have to finish the class we could have chatted on well into the afternoon! I also learned a whole new way of making pastry – I can’t imagine I will ever go back to chilling it in the fridge and then trying to roll it out whilst it’s like a rock. Ann’s way is so much easier, and the result shorter and lighter. You’ll just have to join one of her fab Tuesday Tarte courses to find out how. My husband and I enjoyed most of our delicious tarte for supper and can’t wait to finish the leftovers for lunch tomorrow. Five Stars – thank you Larks!

Kouign Amann, a Breton Cake Made Easy

Kouign Amann comes from the Breton language for cake and butter and originated in Brittany, France. I had requested this recipe and Rachel immediately agreed to teach a class on it.
Rachel is a superb teacher! She carefully took us through a seemingly daunting endeavor to produce a successful dessert. Rachel explains the baking techniques in detail as she did with the process of laminating dough to make it into a puff pastry. I now have the confidence to make Pain au Chocolat as she explained it uses the same laminating process. Her enthusiasm and skills are inspirational. I look forward to more classes with Rachel.

What a lovely way to spend an hour. Every week you finish with a delicious bite to eat, a fantastic cocktail and you always learn several new tips or techniques to improve your cooking. Great company too.
