Saag Chicken (Spinach Based Curry) and Lemon Rice

Saag chicken is the perfect curry for those who are reluctant or refuse to have greens in their diet (especially kids). The flavours of the curry and the meat work really well with the spinach, making it a tasty must-have in your weekly meal plan! Lemon rice is a popular Indian quick fix dish that is loaded with toasted peanuts or cashew nuts and flavoured with lemon and chillies. It is not surprising that this dish is often served at temples for those visiting, given that it is simple, delicious and loved by all.

Ingredients
  

Saag Chicken

  • 500 g boneless chicken pieces 1 (diced small)
  • 4 tbsp milk 2
  • 2 tsp oil 3
  • 1 inch cassia bark or cinnamon stick 4
  • ½ black cardamom 5
  • 2 cloves 6
  • 1 bay leaves 7
  • 2 green cardamoms 8
  • 1 onion 9 (large, finely diced)
  • 3 tomatoes 10 (medium, finely diced)
  • 1 inch fresh ginger 11 (finely chopped)
  • 2 clove garlic 12 (finely chopped)
  • 1 green chilli 13 (finely chopped; adjust heat to taste)
  • ½ tsp cumin powder 14
  • 1 tsp coriander powder 15
  • ½ tsp red chilli powder 16
  • 1 tsp curry powder 17
  • salt 18
  • 1 packet baby spinach 19
  • ½ tsp garam masala 20

Lemon Rice

  • 2 cup cooked rice 1
  • 1-1½ lemon 2
  • salt 3
  • 3-4 tbsp peanuts 4 (raw with skin)
  • 1 tbsp oil 5
  • 1 tsp mustard seeds 6
  • curry leaves 7
  • 1-2 dried red chillies 8
  • 1 tsp. whole cumin seeds 9
  • ½ - 1 tsp turmeric powder 10
  • ¼ tsp asafoetida 11
